The main parts of the leg primal cut are Shintama or Knuckle, and Tomosankaku or Tri-tip, and these will be our highlights for this month. One part that is super rare and often overlooked is Kamenoko or outside knuckle. Kamenoko (outside knuckle) used to be known as tough if it weren't Wagyu, but with proper slicing, it can still be tender.
While, Tri-tip is a triangular cut from the bottom of the sirloin, featuring gorgeous marbling that melts in your mouth. Wagyu Tri-tip is rare and three times bigger than regular beef. It combines the flavor and mouthfeel of tenderloin and ribeye together.
A lean and red cut from the knuckle is perfect if you are in the mood for something condensed beefy taste. Especially when having shabu-shabu or sukiyaki, we recommend you cook it only half way to clearly taste the very best version of this cut.

Our Recommended Method for A5 Wagyu Slice :
We believe in simplicity when it comes to cooking A5 wagyu and suggest you follow suit. Just sears it in a hot pan for approximately 30 seconds on each side. Then, it is optional to give seasonings such as salt and pepper, or sauce like soy sauce or teriyaki sauce. The goal is to achieve a delicious, flavorfull outer crust while allowing the natural taste of this exquisite beef to shine through.
